Perry Family Baked Beans
Ingredients: 12 slices bacon, halved1 medium white onion, chopped1/2 large green pepper, chopped3 (28-oz.) cans pork and beans3/4 cup barbecue sauce1/2 cup brown sugar1/4 cup distilled or cider vinegar2 tsp. dry mustard or 2 tbsp. Dijon mustard
Directions: 1) Adjust oven rack to lower-middle position and preheat to 325°F. 2) Cook the bacon in a large, deep skillet until it starts to release its drippings, about 1/4 cup. Lift out the bacon and drain on paper towels. 3) Add chopped onion and pepper to the drippings in the skillet. Sauté until tender, roughly 5 minutes. 4) Stir in the beans (do not drain!) and the rest of the ingredients. Bring everything up to a simmer. If the skillet is too full, transfer the mixture to a large bowl before adding in the rest. 5) Turn into a greased 13-by-9-inch (or similar) baking dish. Top with crispy bacon. Bake until bubbly and thick, about 2 hours, until the sauce reaches a rich, syrup-like consistency. Let stand briefly before serving.
